Our mussel meats are what we call "blanched", which means they are very quickly cooked at high temperature. This allows the shell to open and release the meat, which becomes firmer while retaining its attractiveness. The mussel is a well-known bait for its power of seduction, especially among the sparids of our waters (breams, grey breams, royal breams, pagellus, etc).
