Our cockle meats are what we call "blanched", that is to say, cooked very quickly at high temperature. This allows the shell to open to get the meat out, which is firmed up while maintaining its attractiveness. The cockle is a shellfish appreciated by many species. You can use a piece to easily fish small fish (bream, seabass, etc) or make a string of several pieces to search for bigger fish. It is one of the most popular baits for grey seabream fishing by boat on the Atlantic coast for its efficiency and ease of use.
