Our almond flesh is what is called "blanched", meaning it is cooked very quickly at high temperature. This allows to open the shell to take out the flesh which is firmed while maintaining its attractiveness. The core of the flesh retains a maximum of scents. Larger than its cousin the cockle, the sea almond is also a shellfish appreciated by many species (sparidae: sars, royal and grey breams, pagres, pageots, etc). The firmness of its flesh makes it a very interesting bait, resistant to strong throws and touches of small fish. It is also a prime bait for longline fishing.
