Our cockle meats are what we call "blanched", meaning they are quickly cooked at high temperatures. This allows the shellfish to open and extract the meat, which becomes firmer while maintaining its attractiveness. The cockle is a shellfish appreciated by many species. It can be used as easily for catching small fish (seabream, seabass, etc.) as for creating a string of several pieces to search for larger fish. It is one of the most prized baits for fishing gray bream by boat on the Atlantic coast for its effectiveness and ease of use.
