Le saumon chinook ou saumon quinnat est un membre emblématique de Salmon Family. Il est originaire des eaux froides du Pacifique et on le retrouve du nord de la Californie jusqu'en Alaska. L'espèce a également été introduite dans les Grands Lacs et est une espèce prisée des pêcheurs nord-américains et les chefs du monde. Le saumon quinnat est connu pour ses longs voyages de retour dans ses eaux natales pour le frai, au cours duquel il change de couleur, passant de l'argent à une couleur brun olive ou roux. Peu de temps après le frai, les quinnats voient leurs dernier jours dans ses cours d’eau natal.
