Plaice form a group of flat fish species from the Pleuronectidae family. These are demersal fish, which gives them their characteristic flat body shape and unilateral appearance. Plaice can quickly hide and camouflage themselves, thanks to their ability to change colour and burrow into the sand. They are nocturnal predators, feeding mainly on small marine organisms. Plaice is invariably associated with the waters of the North Sea and the Baltic Sea, where it constitutes a significant part of commercial fishing and local culture.
